Hot Kale Pasta
This has fast become my favourite pasta dish! I got the idea for this dish from Hugh Fearnley-WhittingStall in his book ‘River Cottage Veg’. Hughs recipe requires frying of some of the ingredients but I prefer them raw for better goodness, texture and flavour. Enjoy this dish, you will absolutely love it if you like eating tasty and healthy food:)
Hot Kale Pasta! – Serves 2
You will need:
Pasta, enough for 2 – I like to use spelt when possible as it’s not as bad for you as white or wholewheat pastas.
Kale, 2 handfuls – stalks removed. You can use savoy cabbage instead of kale for another tasty option
Chilli, 1 red or green
Garlic, 1 clove
Onion, 1 medium
Olive oil, as much as you like. I personally love loads of oil and will add at least 50 mls to this recipe
Salt, 2 teaspoons – or to taste
Avocado, 1 large or 2 medium – chop and sprinkle over finished dish for a great and healthy finish
Preperation:
Bring a pan of water to the boil then add pasta. While the pasta is cooking you can prep the rest of the ingredients. Remove the stalks from the kale and roughly chop. Finely chop the garlic, chillie and onion.
When pasta is 2-3 minutes from your desired texture, add the kale to the pan and mix well with the pasta. When finished drain the pasta and kale, add back to the pan and add oil, garlic, onion, salt and chillie. Mix well together and serve with chopped avocado on top. And there you have it, a beautiful healthy dinner option. You’ll be gobsmacked at how good this tastes:)
